Homemade Marshmallows

These honey-sweetened, pillowy marshmallows are a delightful treat that’s perfect for snacking, adding to hot cocoa, or even roasting! With just a few ingredients, you can create a batch of fluffy marshmallows with a hint of natural vanilla. This recipe keeps things simple by using honey instead of refined sugar, making them a unique twist on the classic marshmallow.

Ingredients

  • 1.5 cups water (divided)

  • 3 tablespoons gelatin powder

  • 1/2 cup honey

  • 1 tablespoon vanilla extract

  • optional: powdered sugar topping

Instructions

Step 1: Prepare the Gelatin

  1. In a mixing bowl, add 3/4 cup of water and sprinkle the gelatin on top. Allow it to bloom for about 5 minutes. This step helps the gelatin dissolve better and gives the marshmallows their signature texture.

Step 2: Make the Syrup

  1. In a saucepan over medium heat, combine the remaining 3/4 cup of water and the honey. Stir until the mixture is smooth and starts to simmer gently. Let it cook for about 5 minutes, reaching around 240°F if you have a candy thermometer (for a firmer set) or until thick and syrupy.

Step 3: Combine and Whip

  1. Carefully pour the hot honey mixture into the bloomed gelatin while mixing on low speed. Gradually increase to high speed and continue to whip for about 10 minutes until the mixture is thick, glossy, and holds stiff peaks.

  2. Add the vanilla extract and mix for another 30 seconds to combine.

Step 4: Pour and Set

  1. Lightly oil a square baking dish or line it with parchment paper. Pour the marshmallow mixture into the dish, smoothing out the top with a spatula.

  2. Optional: sprinkle some powdered sugar on the top for gloss

  3. Let it sit at room temperature for 4-6 hours (or overnight) to firm up.

Step 5: Cut and Enjoy

  1. Once set, cut the marshmallows into squares or your desired shapes using a sharp knife. Dust with a bit of cornstarch or powdered sugar if you like, to prevent sticking.

Tips for Perfect Marshmallows

  • Texture: For a more solid marshmallow, add a bit more gelatin. For softer marshmallows, reduce the whipping time slightly.

  • Storing: Keep marshmallows in an airtight container for up to a week at room temperature.
