Homemade Eggnog

Ingredients

For the Eggnog:

  • 4 large egg yolks

  • 2 cups whole milk

Instructions

1. Whisk the Egg Yolks

2. Heat the Milk and Spices

3. Temper the Eggs

Slowly pour about 1/4 cup of the warm milk mixture into the egg yolk mixture while whisking constantly. This step, called tempering, prevents the eggs from curdling. Gradually add more of the milk mixture in small increments until fully incorporated.

4. Cook the Eggnog

Pour the tempered mixture back into the saucepan. Cook over low heat, stirring continuously, until the eggnog thickens slightly and coats the back of a spoon. Be careful not to let it boil, as this can scramble the eggs.

5. Add the Vanilla

Remove the saucepan from heat and stir in the vanilla extract. Discard the cinnamon sticks.

6. Cool and Chill

Let the eggnog cool to room temperature, then transfer it to a pitcher or airtight container. Refrigerate for at least 2 hours before serving to let the flavors meld and the eggnog chill.
