Garlic Chicken Skewers

Instructions:

  1. Make the marinade: In a medium bowl, whisk together the olive oil, minced garlic, hot sauce (if using), coconut aminos, lemon juice, salt, pepper, and onion powder. Stir in the minced parsley.

  2. Marinate the chicken: Add the chicken chunks to the marinade, making sure all pieces are evenly coated. Cover and refrigerate for at least 30 minutes or up to 2 hours to allow the flavors to soak in.

  3. Soak the skewers: If using wooden skewers, soak them in water for at least 30 minutes before threading the chicken. This helps prevent them from burning on the grill or in the oven.

  4. Prepare the skewers: Preheat your grill or oven. Thread the marinated chicken pieces onto the skewers, leaving a bit of space between each chunk for even cooking.

  5. Cook the skewers:

    • Grill method: Grill the skewers over medium heat for 12-15 minutes, turning occasionally, until the chicken is fully cooked and has a nice char.

    • Oven method: Preheat the oven to 400°F (200°C). Bake the skewers for 20 minutes, flipping halfway through, until the chicken is cooked through.

  6. Garnish and serve: Remove the skewers from the heat and garnish with lemon slices and a sprinkle of fresh parsley. Serve hot with your favorite side dish.
