Fig Prosciutto Baked Brie

Ingredients
For the Brie:
1 (8-12 ounce) wheel of brie cheese
1-2 tablespoons honey

¾ cup blanched almond flour
¾ cup all-purpose flour
½ cup grass-fed butter, cold and cubed
1 tbsp coconut sugar
½ tsp fine-grain sea salt
1 large egg

1 egg, beaten (for egg wash)
Instructions
1. Prepare the Crust
In a large mixing bowl, combine almond flour, all-purpose flour, coconut sugar, and sea salt.
Add the cold, cubed butter and work it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
Stir in the egg and mix until the dough comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the Brie
Preheat your oven to 375°F (190°C).
Carefully slice the top rind off the brie wheel (optional for an extra gooey center).
Drizzle the top with honey and sprinkle with chopped pistachios and halved dried figs.
3. Wrap the Brie in Prosciutto
Lay the prosciutto slices on a cutting board, slightly overlapping, to form a layer large enough to cover the brie. Place the brie in the center and wrap it tightly in the prosciutto.
4. Assemble the Baked Brie
Roll out the chilled pastry dough on a floured surface into a circle large enough to fully enclose the wrapped brie.
Place the prosciutto-wrapped brie in the center of the dough. Add the halved figs on top of the brie and fold the dough edges over the brie, pinching to seal any gaps.
Brush the beaten egg over the top and sides of the dough for a golden finish.
5. Bake the Brie
Transfer the wrapped brie to a parchment-lined baking sheet. Bake for 20-25 minutes, or until the crust is golden brown and flaky.
