Perfect for holiday gatherings or a weekend treat!

Ingredients

For the Crust:

  • ¾ cup blanched almond flour

  • ¾ cup all-purpose flour

  • ½ cup grass-fed butter, cold and cubed

  • 1 tbsp coconut sugar

  • ½ tsp fine-grain sea salt

  • 1 large egg

For the Apple Filling:

  • 4 large apples (Honeycrisp and Granny Smith work well), cored and sliced into ¼” slices

  • ¼ tsp salt

  • 2 tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp ginger

  • 1 tbsp lemon juice

  • 2 tbsp coconut sugar

For the Crumble Topping:

  • 3 tbsp coconut sugar

  • ½ cup blanched almond flour

  • 1 tsp cinnamon

  • 1 tbsp coconut oil, solid

  • 1 tbsp grass-fed butter, softened

  • ⅛ tsp fine-grain sea salt

Instructions

1. Preheat and Prepare the Crust:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie pan or line it with parchment paper for easy removal.

  2. In a mixing bowl, combine the almond flour, all-purpose flour, coconut sugar, and salt.

  3. Using a pastry cutter or fork, cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.

  4. Add the egg and mix until a dough forms. Press the dough into the bottom and up the sides of the prepared pie pan.

  5. Bake the crust for 10 minutes, then remove it from the oven and let it cool slightly.

2. Prepare the Apple Filling:

  1. In a large bowl, toss the apple slices with lemon juice, coconut sugar, salt, cinnamon, nutmeg, and ginger until the apples are evenly coated.

  2. Pour the apple mixture into the pre-baked pie crust, spreading it out evenly.

3. Make the Crumble Topping:

  1. In a separate bowl, combine the almond flour, coconut sugar, cinnamon, and salt.

  2. Using your fingers or a fork, work the coconut oil and butter into the dry ingredients until the mixture forms coarse crumbs.

  3. Sprinkle the crumble mixture evenly over the apple filling.

4. Bake the Pie:

  1. Place the pie in the preheated oven and bake for 40-45 minutes, until the apples are tender and the topping is golden brown.

  2. If the topping or crust begins to brown too quickly, cover the pie loosely with aluminum foil for the remainder of the baking time.

5. Cool and Serve:

  1. Remove the pie from the oven and let it cool for at least 15 minutes before slicing.

  2. Serve warm on its own or with a scoop of vanilla ice cream.

Tips for the Best Apple Crumble Pie:

  • Apple Choice: Use a mix of Honeycrisp and Granny Smith for a perfect balance of tart and sweet flavors.

  • Make-Ahead Option: You can prepare the crust and apple filling in advance and store them in the fridge. Add the crumble just before baking.

  • Gluten-Free Variation: Substitute the all-purpose flour with a gluten-free flour blend.

Enjoy this cozy, delicious Apple Crumble Pie – the perfect combination of sweet apples, warm spices, and a nutty, buttery crumble!
