Sweet Potato Pizza

Ingredients:

  • 1 medium sweet potato

  • 1 chicken breast, cooked and shredded

  • BBQ sauce (your favorite brand)

  • 1 cup shredded white sharp cheddar cheese

  • Fresh cilantro, for garnish

  • 1/2 tsp red pepper flakes

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • Salt and pepper, to taste

Instructions:

  1. Boil the Sweet Potato: Start by boiling the whole sweet potato in a pot of water for about 15-20 minutes, until it's fork-tender. Preheat your oven to 450°F (230°C) while the sweet potato is cooking.

  2. Prepare the Sweet Potato Base: Once the sweet potato is done boiling, carefully cut it in half lengthwise. Place the halves on a baking sheet, cut side up, and gently smash them down to create a flat, pizza-like base. Season generously with salt, pepper, garlic powder, and onion powder.

  3. Roast the Sweet Potato: Place the seasoned sweet potato halves in the preheated oven and roast for about 10 minutes until the edges start to crisp up slightly.

  4. Cook the Chicken: While the sweet potato is roasting, season your chicken breast with salt, pepper, garlic powder, and onion powder. Cook the chicken in a pan over medium heat until fully cooked, then shred it and toss it with your favorite BBQ sauce.

  5. Top and Bake: Remove the roasted sweet potato from the oven. Spread a layer of BBQ sauce on top of each sweet potato half, then add the shredded BBQ chicken. Sprinkle shredded white cheddar cheese on top. Return the sweet potato pizzas to the oven and bake for another 8-10 minutes until the cheese is melted and bubbly.

  6. Garnish and Serve: Once the sweet potato pizzas are done, garnish with fresh cilantro and a sprinkle of red pepper flakes for a touch of heat. Serve immediately and enjoy!
