Spicy Roasted Carrots with Greek Yogurt Sauce

  • 1/4 tsp cooking salt/kosher salt

Instructions:

  1. Prep the Carrots: Preheat the oven to 425°F (220°C). Peel the carrots and slice them in half lengthwise for even roasting. Place them on a lined baking sheet.

  2. Make the Spicy Maple Sauce: In a small bowl, whisk together the maple syrup (or honey), sriracha, olive oil, salt, and pepper until well combined. Pour this sauce over the carrots and toss them until fully coated.

  3. Roast the Carrots: Spread the carrots out in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway through, until the carrots are tender and caramelized.

  4. Prepare the Lemon Garlic Yogurt Sauce: While the carrots are roasting, combine the Greek yogurt, grated garlic, lemon juice, olive oil, and salt in a small bowl. Stir until smooth and creamy.
