Pecan Bars

These pecan bars combine a buttery almond flour crust with a rich, date-sweetened pecan filling that’s perfect for holiday gatherings or a sweet treat any time of the year.

Ingredients

For the crust:

  • 1½ cups almond flour

  • ⅓ cup coconut sugar

  • ⅓ cup melted butter (or coconut oil for dairy-free)

  • 1 tbsp maple syrup

  • ½ tsp vanilla extract

  • Pinch of salt

For the filling:

  • ⅓ cup coconut oil

  • ¼ cup maple syrup

  • 1 tsp vanilla extract

  • 2 large eggs

  • 1 cup pecans, chopped

  • ½ cup dates, pitted and finely chopped

  • Pinch of salt

Instructions

1. Prepare the crust:

  • Preheat the oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.

  • In a mixing bowl, combine almond flour, coconut sugar, melted butter, maple syrup, vanilla extract, and salt. Mix until a crumbly dough forms.

  • Press the dough evenly into the prepared baking dish, creating a firm and level crust.

  • Bake for 8-10 minutes or until lightly golden. Remove and let cool while you prepare the filling.

2. Make the filling:

  • In a mixer bowl combine the melted coconut oil, maple syrup, vanilla extract, and soaked blended dates. Mix until well combined.

  • Add the eggs and mix until fully incorporated.

  • Fold in the chopped pecans and a pinch of salt until everything is well combined.

3. Assemble and bake:

  • Pour the pecan-date filling over the pre-baked crust, spreading it evenly.

  • Return the dish to the oven and bake for 20-25 minutes, or until the filling is set and golden brown on top.

4. Cool and slice:

  • Allow the pecan bars to cool completely in the pan before slicing into squares or rectangles.

Tips for Success

  • For extra texture, toast the pecans before mixing them into the filling.

  • Use Medjool dates for a naturally sweet and sticky addition to the filling.
