Cider Braised Chicken
This Cider Braised Chicken with earthy mushrooms and aromatic herbs is the perfect fall dish, balancing savory and sweet. The key ingredient, apple cider, gives the chicken a unique depth of flavor, while fresh thyme and sage bring a beautiful aromatic quality. Adding apple cider vinegar helps caramelize the onions, giving them a richer, golden taste.
Ingredients:
2 pounds chicken thighs (skin-on, bone-in)
1 tablespoon all-purpose flour
Kosher salt to taste
Black pepper to taste
1 tablespoon salted butter
2 yellow onions, thinly sliced
½ cup apple cider vinegar
1 cup apple cider
2 cups sliced mushrooms
4 cloves garlic, chopped
2 tablespoons fresh thyme, chopped
1 tablespoon fresh sage, chopped
1 cup bone broth
Instructions:
Prepare the chicken: Season the chicken thighs with salt and pepper, then lightly dust with flour to create a crisp skin when searing.
Sear the chicken: Heat the butter in a large skillet over medium-high heat. Add the chicken thighs, skin-side down, and sear until golden brown. Flip and sear the other side for 2-3 minutes. Remove and set aside.
Cook the onions: In the same skillet, add the sliced onions and cook until translucent, about 5-7 minutes. Add ½ cup apple cider vinegar and cook until it evaporates and the onions become golden brown.
Add mushrooms and garlic: Stir in the mushrooms and cook until softened and slightly browned, then add the garlic and cook for an additional minute.
Braise the chicken: Pour in the remaining apple cider and bone broth, stirring to combine with the onions and mushrooms. Add thyme and sage.
Simmer: Nestle the chicken thighs back into the skillet, skin-side up. Lower the heat, cover, and let braise for 25-30 minutes until tender.
Finish: Uncover and let the sauce reduce for a few minutes. Taste and adjust seasoning with salt and pepper.
This Cider Braised Chicken is best served with mashed potatoes or crusty bread, perfect for soaking up the flavorful sauce. Adding the cider vinegar step deepens the onion’s caramelized flavor, enriching the dish. Enjoy this cozy, comforting meal with a touch of fall sweetness!
