Instructions

Prepare the tofu ‘croutons’:

  1. Preheat your oven to 400°F (200°C).

  2. Toss the cubed tofu with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread the tofu evenly on a baking sheet lined with parchment paper.

  3. Bake for 25-30 minutes, flipping halfway, until golden and crispy.

Make the soup:

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until softened, about 5 minutes.

  2. Stir in the garlic, ginger, and turmeric, and cook for another 1-2 minutes until fragrant.
