Ingredients
For the soup:
2 tbsp olive oil
1 medium onion, diced

4 cups bone broth (or vegetable broth to make it vegetarian/vegan)
1 cup coconut milk

1 block firm tofu, pressed and cubed
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder

Instructions
Prepare the tofu ‘croutons’:
Preheat your oven to 400°F (200°C).
Toss the cubed tofu with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread the tofu evenly on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, flipping halfway, until golden and crispy.
Make the soup:
Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
Stir in the garlic, ginger, and turmeric, and cook for another 1-2 minutes until fragrant.
Add the carrots and bone broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the carrots are tender.
