Gut-Friendly Cookie Dough Cups

Ingredients

Cookie Dough Layer:

  • 1/3 cup almond butter

  • 1/3 cup vanilla protein powder

  • 1 Tbsp chia seeds

  • 1/4 cup dark chocolate chips

Chocolate Shell:

  • 1/2 cup dark chocolate chips

  • 1 Tbsp coconut oil

Instructions

1. Prepare the Cookie Dough Layer:

  1. In a mixing bowl, combine almond butter, protein powder, almond flour, softened coconut oil, maple syrup, salt, and chia seeds. Mix until a soft, cookie dough-like consistency forms.

  2. Fold in the dark chocolate chips.

2. Assemble the Cups:

  1. Line a muffin tin with silicone or paper liners.

  2. Press about 1-2 tablespoons of the cookie dough mixture into the bottom of each liner, flattening it evenly.

  3. Place the muffin tin in the freezer for 10-15 minutes to set.

3. Make the Chocolate Shell:

  1. Melt the dark chocolate chips and coconut oil in the microwave in 20-second intervals, stirring until smooth.

4. Finish the Cups:

  1. Remove the cookie dough bases from the freezer.

  2. Spoon the melted chocolate mixture over each cookie dough layer, spreading it to create a smooth shell.

  3. Sprinkle with a pinch of sea salt for an extra flavor boost (optional).

  4. Return to the freezer for another 10-15 minutes or until fully set.

5. Serve and Enjoy:
