Buffalo Mac and Cheese
Ingredients:
400g Cottage Cheese
100 ml Whole Milk
1 cup Aged Cheddar Cheese, shredded
1 cup Colby Jack Cheese, shredded
1 cup Cauliflower, steamed and blended
320g Dry Elbow Pasta
2 Chicken Breasts, cooked and shredded
1 cup Buffalo Sauce
4 Cloves Garlic, minced
Salt and Pepper to taste
Instructions:
Cook the Pasta:
Cook the elbow pasta according to the package instructions. Drain and set aside.
Prepare the Cauliflower Sauce:
Steam the cauliflower florets until tender. Blend the steamed cauliflower with whole milk until smooth. Set aside.
Cook the Chicken:
Season the chicken breasts with salt and pepper. Cook in a skillet over medium heat until fully cooked, then cut the chicken into cubes. Set aside.
Make the Cheese Sauce:
In a large saucepan over medium heat, add the minced garlic and sauté until fragrant.
Add the cottage cheese to the saucepan, stirring until smooth.

Combine the Ingredients:
Add the cooked pasta and shredded chicken to the cheese sauce, stirring to combine.
Pour in the buffalo sauce, adjusting the amount to your preferred level of spiciness. Stir until everything is well coated.
Season and Serve:
Taste and season with additional salt and pepper if needed.
